Black Bean Corn Salsa

Restaurant quality fresh salsa at home



This black bean corn salsa is packed with amazing flavor, is healthy and incredibly easy to make. Like a number of our other summertime dishes, this one goes great poolside at parties and is always good to have on hand when you need to add a punch of flavor to your palette.


Perfect with tortilla chips or as a condiment over grilled chicken.


Ingredients

• 2 15oz cans of mixed (white and yellow) corn, drained

• 1 can black beans, drained and rinsed

• 1 cup thinly sliced celery

• 1 3/4 cup mixed bell peppers

• 1/3 cup diced red onion

• 1/3 cup sliced green olives

• 1/3 cup olive oil

• 1/4 cup red wine vinegar

• 2 tablespoons lime juice

• 3 cloves mined garlic

• 3/4 teaspoon salt

• 1/4 teaspoon pepper

• 1/2 cup fresh chopped cilantro


Instructions

Chop and mix all the veggies in a large bowl.

Mix oil, vinegar, lime juice, garlic, salt and pepper in small bowl.

Toss veggies and oil mix together, fold in chopped cilantro. Refrigerate for 3 to 4 hours. Serve with your favorite chips!
