Grilled Brie with Grilled Cherry Tomatoes

If you are looking for a tasty, fun, yet sophisticated app to serve at your next summer party...look no further. Easy to prepare and even easier to eat, this rich savory treat will earn you "top host" accolades across the board. Taking in the fresh flavors of summer while we still can, here is your cheat sheet to flavortown!


INGREDIENTS

  • 8oz Brie wheel with rind on

  • 2 pints cherry tomatoes

  • 2 tablespoons fresh chopped basil

  • 2 tablespoons olive oil

  • ¼ teaspoon paprika

  • â…› teaspoon garlic salt

  • ¼ teaspoon Italian seasoning (optional)

  • Salt and pepper to taste

  • 1 loaf of sliced ciabatta bread, french bread or baguette (can also be served with your favorite crackers)


Instructions

  1. Slice tomatoes in half, toss in a bowl with olive oil and seasonings

  2. Create a foil packet, add tomato mixture to foil packet, close tightly and place on preheated grill. Grill for 6 to 7 mins and flip for another 7 to 8 mins. This doesn’t have to be an exact time. Leave tomatoes on grill until the cheese is done.

  3. After getting tomatoes on the grill, prepare your Brie and bread by brushing both sides with olive oil.

  4. Add the oiled Brie directly on grill grates and flip after 3 mins or when you can see grill marks

  5. Add your oiled bread to the grill and lower the heat. You want grill marks on the both sides of bread and for the Brie to become soft and to begin to melt. Should take about 5-8 mins

  6. Remove everything from grill, add a few fresh pieces of fresh basil to tomatoes and serve with bread and Brie while hot, enjoy!
